How to make a delectable cheese quesadilla on the stove. Enjoy it plain or with select fillings like steak, onions, pickled jalapenos etc. Tips on the best melting cheeses for quesadilla and the dips to serve it with.
2cupsgrated quesadilla cheese, Chihuahua or Oaxaca quesillo*
Instructions
Place a skillet over medium-high heat and melt ½ tablespoon of butter (or to taste).
Immediately warm a tortilla for about 10-20 seconds on one side.
Before it has absorbed all the butter, flip it over.
Add about ½ cup of cheese (or to taste), mostly over one half of the tortilla. Lower the heat to medium-low.
Fold the other half of the tortilla over to cover the cheese covered part.
Press it down very gently and allow the quesadilla to cook on that side for about a minute.
Flip it over and cook it on the other side for about a minute or until the cheese is perfectly melted when you check the inside by gently lifting the top half of the quesadilla.
Remove the quesadilla from the pan and allow it to cool down just a bit.
Cut into wedges and enjoy immediately, served with guacamole, salsa, sour cream or quesadilla sauce.

* These are the two traditional, best performing cheeses for quesadilla and both are easy to find in most grocery stores. For more information on cheese options - read the section in the post. If you will be adding other fillings to the quesadilla, for example cooked steak and diced onions for some crunch, use a bit less cheese so that there is room for the other fillings. In advance warm up the sliced steak (or other cooked protein you may be adding) before you place it onto the quesadilla. Otherwise it is likely that it will not warm through for the short time it takes for the cheese to melt and the tortilla to brown nicely on the outside.The nutritional information is provided as a courtesy guideline only and is not precise.
