How to cook yellow beets in the oven to achieve tender texture and a delightful thin crust on the outside of pieces. Whether you call them golden beets or orange beets - they will turn out delicious.

Equipment
1 vegetable peeler
1 standard half baking sheet, lined with parchment paper
1 medium mixing bowl
Ingredients
1lbsyellow beets(aka golden beets or orange beets)
2 tablespoonolive oil
½teaspoonkosher salt, or to taste
¼teaspoonblack pepper,or to taste
½ tsp garlic powder, (optional)
½teaspoononion powder, (optional)
1tablespoonfresh thyme*
Instructions
Turn on the oven to 400 F and line the half baking sheet with parchment paper. Peel the yellow beets.
Chop the beets into more or less uniform wedges, about bite-sized.
In a mixing bowl combine the chopped yellow beets with the seasonings and olive oil. Mix to coat well.
Transfer the beets onto the prepared baking sheet and spread them as uniformly as you can for more even roasting.
Roast for 20 minutes and carefully flip the wedges over.
Roast for another 15 or 20 minutes, as needed, until the yellow beets reach your desired tenderness and crispy exterior. Take out of the oven and serve.
Notes
*You can use dried thyme (about ½ tsp) or fresh sage leaves or other herb of your choice. You can also add up to ¼ cup of finely grated Parmesan cheese to coat the yellow beets (increase the olive oil as needed if you do so). They will develop a wonderful umami crust in result.
