German Horseradish Sauce

This creamy horseradish sauce is perfect to serve with a variety of proteins. It hails from Germany, considered the homeland of horseradish as a culinary ingredient and has a mild and balanced flavor. To amplify the heat increase the amount of prepared horseradish or use fresh grated horseradish soaked in vinegar.

Ingredients

3-4 tablespoon prepared horseradish
½ cup sour cream
2 tablespoon mayonnaise
1 tablespoon sweet Bavarian mustard*
1 spring onion finely chopped
kosher salt to taste
black pepper to taste

Instructions

Combine all the ingredients in a bowl and stir until a homegenous mixture forms.
Taste and season with salt and pepper as needed.
Serve right away or keep refrigerated and covered until ready to enjoy.

Notes

*As a substitute for sweet Bavarian mustard you can use honey mustard or mild whole grain mustard and a touch of honey or even Dijon mustard.
